A lot of what you're looking for depends on the species and time you want to put on the water.  For example, the inshore option is great for species such as Yellowtail, Bass, Barracuda, Bonito and more.

The Offshore option, most commonly referred to as the "Deep Sea", you can catch species such as blue fin tuna (highly sought after), yellow fin tuna, mahi mahi, marlin and more.  These are long fishing days, with 9 and 12-hour options.
